#2: Lobster and heritage tomatoes at Gregan’s Castle in Ballyvaughan-
What a summer treat: Our local New Quay lobster perfectly cooked and served cold in a salad alongside Chef Robbie McCauley’s succulent homegrown tomatoes—with lettuce leaves underneath and sourdough toast on top.
It was the perfect complement to the bubbly we drank that August afternoon for Kelly’s birthday.
The restaurant at Gregan’s Castle has been open only to hotel guests for most of the year due to COVID restrictions. We were lucky to get a rare lunch booking. We were the only guests and we were seated in the bar.
Can’t wait for the dining room to open again for us locals.
