No. 7 Baozi Bao at Pow Bao food truck in the EATYARD  

This spectacular boa bun sandwich featured a steamed Chinese bun split open and spread with guacamole, topped with a fried egg, strips of crispy pancetta bacon and drizzled with Colnakilty black pudding mayo. It was one of many alluring food choices I sampled last spring at the cutting edge Dublin food court known as the EATYARD located at 9-10 South Richmond next to the Bernard Shaw.

Sadly, the Pow Boa food truck is no longer parked at EATYARD, but they may return when the weather warms up. Pow Bao, which had a food stall and a food truck operating last year, calls their innovative sandwiches “Asian tacos” and they are absolutely delicious–keep an eye out for their next location. There were reportedly several other eateries serving bao buns in Dublin, we hope to sample the others soon.
