My Top 10 Irish Dishes of 2020 #1

Roast Grouse with blackberries and liver pate at Gregan’s Castle in the Burren was the most spectacular thing we put in our mouths in 2020. Chef Robbie McCauley hits it out of the park so often, we have come to expect a home run at every meal.

And as if this wild game dish wasn’t impressive enough, the chef paired the plate of breast meat with another little plate of cabbage stuffed with a seasoned forcemeat from the legs and thighs of the grouse, served in a bread sauce.

What an amazing dinner!
